Ingredients

  • 375 mL (1½ cups) all purpose flour 
  • 2.5 mL (½ tsp) baking soda 
  • pinch of salt 
  • 170 mL (¾ cup) unsalted butter 
  • 250 mL (1 cup) brown sugar 
  • 30 mL (2 Tbsp) white sugar 
  • 1 egg 
  • 1 egg yolk 
  • 195 g (7 oz) chocolate (milk or semisweet), coarsely chopped 

Directions

  1. Melt the butter in a small pot on the stove over low heat, or in a microwave-safe bowl in the microwave on low power for 30 seconds. 
  2. In a medium bowl, combine the flour, baking soda, and salt. 
  3. In a large bowl, combine the butter and both sugars with a wooden spoon. Add the egg and yolk and stir until smooth.  
  4. Stir the dry ingredients and chocolate into the wet mixture. 
  5. Cover and refrigerate for 1 hour or overnight. 
  6. With the rack in the middle position, preheat the oven to 190 °C (375 °F). Line the baking sheets with parchment paper or baking mats. 
  7. Using a table spoon, spoon 6 balls of dough onto each baking sheet, spacing them out evenly. 
  8. Bake one sheet at a time for 8–9 minutes or until lightly browned all over. They will still be very soft in the centre. Remove from the oven using oven mitts. 
  9. Cool completely on the baking sheet.
